Effect of Solvent Pre-Treatment on the Physicochemical, Thermal Profiles and Morphological Behavior of <i>Mangifera pajang</i> Seed Fat

In this work, the effect of solvent pre-treatment (hexane, petroleum ether and ethanol) on physicochemical, thermal morphology behavior Mangifera pajang seed fat (MPSF) were investigated. The results showed that yield, crystalline structures MPSF significantly (p<0.05) influenced by extraction solvents. Hexane gave highest yield (7.67%) with low unsaturation value (52.13 g iodine/g) compared ethanol. also had oxidation rate (peroxide 1.1 mEq/g). Both non-stabilized stabilized hexane a single melting endothermic peak at high temperature onset, maximum offset 16.23 ˚C-18.21 ˚C, 28.22 ˚C-31.25 ˚C 34.85 ˚C-39.58 respectively. crystallized rapidly starting 16.51 ˚C-16.68 ending 0.23 ˚C-1.13 ˚C. comparison ethanol extract, demonstrated compact structure large densely packed center. exhibited similar morphological to mango kernel commercial cocoa butter. These suggested was best for MPSF. This has potential be applied as butter alternative fat.
